Cooking meringues with strawberries:

Step 1: prepare the egg whites.

Immediately after that we take them out of the refrigerator and pour them into a small bowl. Add sugar in small portions in 2-3 doses. At the same time, everything is well beaten with a mixer at medium speed until a lush dense mass with peaks is formed. Attention: in the first tricks, the mass can be simply lush with white foam on the surface. In the last dose, egg whites should acquire a dense structure. This can be checked by turning the container upside down - the mass should not flow down the walls of the bowl.

Step 2: prepare the meringue cakes.


Using a tablespoon, spread the protein mass in a confectionery syringe. Cover the baking sheet with baking paper. And now at a short distance from each other we form bezeshki, which should be approximately in diameter 6-8 centimeterslike a cake.

Attention: in order to prepare cakes, it is not necessary to use a confectionery syringe. You can simply put a tablespoon of a small amount of protein, spreading it evenly on all sides, so that the cake is well baked.
Put the baking sheet in the oven and bake the meringue at a temperature 80 ° C during 2-5 hours depending on the size of the cakes. Ready-made meringues should turn out to be quite fragile throughout. Therefore, they will need to be carefully transferred to a serving dish. After the allotted time, we take out, using kitchen tacks, a baking sheet from the oven and set aside to cool to room temperature.

Step 3: prepare the strawberries.


We wash the strawberries under running warm water and put it on a cutting board. We clean the berries from the tails and 140 grams put in a blender bowl. Chop the strawberries at medium speed for 1-2 minutes to the state of mashed potatoes.

The remaining 100g with a knife, cut the strawberries lengthwise into plates and transfer to a free plate.

Step 4: prepare the cream.


We spread the cream in a free small bowl and, using the mixer at low speed, beat until stable foam. Attention: cream must be fat, otherwise the cream just does not work and will be liquid, like kefir.

Step 5: prepare milk and strawberry cream.


1/2 part whipped cream Using a tablespoon, transfer to another empty bowl. Add strawberry puree and powdered sugar to one part, and with the help of improvised stock, beat until smooth. This is best done in two steps to mix the components of the cream well.

Step 6: prepare the meringue with strawberries.


On a serving dish, carefully lay out the cooled meringue. Then, using a tablespoon, gently spread whipped cream on the entire surface of the meringue cake. We spread strawberry plates with the third layer. Then we spread the meringues again, and after that we lubricate its surface with milk-strawberry cream and spread the pieces of strawberries. At the end, we cover all this beauty with the third meringue and lightly crush everything with clean, dry hands along the edge so as not to break the meringue.
Attention: You can create a dessert to your taste. For example, you can put cream on the last layer and decorate the meringue with strawberry slices. If desired, the dish can be sprinkled with chopped nuts. So, put the dessert in the refrigerator to infuse for 30 minutes, as well as to harden the cream and cement our design.

Step 7: serve the meringue with strawberries.
